Leftover Mashed Potato Waffles

So during the holidays, you made a huge batch of mashed potatoes… what to do with the leftover? We make waffles with them! Yum! The ingredients needed are probably already in your pantry. Just add eggs, flour, scallions, bacon bits, cheese, and garlic powder. You can also add any of your favorite breakfast companions like sausages, hotdogs, or ham. Or if you’re not up for the meat, you can add vegetables you would likely put in an omelette. Fun and easy to make!

Makes 4 waffles

Ingredients:

2 heaping scoops of leftover mashed potatoes

2 eggs

1/2 c flour

1/2 c cheddar cheese, shredded

bacon bits

scallions, chopped

1 tsp garlic powder

salt and pepper

Directions:


Mix all ingredients in a bowl.

cook in waffle griddle

serve with cream cheese or sour cream sprinkle with scallions

*leftover waffles can be frozen up to 1 month. Reheat in the microwave or in the toaster over.
